Prepare the fish, meat, chicken, turkey, pork or even oysters you are looking to smoke. Load onto the cooking rack and close the latch door.

Set the temperature on the product monitor and then set the ideal cooking temperature on the gas temperature control valve. Light the burner using the spark ignitor and use access hole to make sure burners are now lit and let it cook.
